Banoffee pie is a gorgeous dessert that’s incredibly luxurious, but it’s actually surprisingly easy to make. When I set out to make this Banoffee Pie I wasn’t sure how feasible it would be to make it dairy-free, but it turns out that it’s completely do-able thanks to the existence of coconut-based condensed milk. Beef Keema (serves 4-6)
Beef keema is an Indian curry which is based on slow cooked beef mince and peas in a rich tomato sauce. Although I make mine with beef mince you can also make it with lamb mince if you prefer. As with many curries, such as my Lamb Dansac, this beef keema is absolutely fantastic when cooked throughout the day in the slow cooker, particularly when the weather’s definitely on the turn towards winter and you look forward to coming home to a warming meal after work. This Chocolate Chia Pudding gets its structure from chia seeds, little protein-rich seeds which absorb up to 12 times their own weight in liquid. They don’t really have much of a taste themselves, but they act as little sponges which soak up the flavoured liquid you plump them up with and, as a result, have a range of uses when it comes to cooking. Greek salad is an incredibly delicious salad to serve as a side dish, but thanks to its cubed feta cheese, mixed olives and chunks of fresh cucumber it’s substantial enough to serve as a main meal for lunch too. Greek salad is seriously FODMAP-friendly because as long as you keep to the recommended amount of feta and pomegranate seeds per portion it’s very low FODMAP. Continue reading
