I was recently sent a bottle of low FODMAP ranch dressing by the American company LiveFree Foods to test and I decided to make a salmon fillet salad with it. I’ve got to be honest, I’m not the biggest fan of salad dressings because a lot of the time I find them too vinegary, but I was willing to give the lactose-free LiveFree ranch dressing a go because I was curious to taste what it would be like without any onion or garlic in the ingredient list.

Lentil and Vegetable Soup (serves 4-6)
I went for a long walk the other Sunday morning and when I got back home I wanted something really warming and comforting for lunch. As we all know, there’s nothing more warming than a steaming bowl of hot homemade soup, so I got cracking with making a big pot of quick and very easy to make lentil and vegetable soup and within an hour (thanks to my trusty food processor) it was ready to eat.

Sometimes at the weekend I like to make something a little bit more special for breakfast than the usual toast, porridge or cereal that I would usually have during the week. There’s something really nice about having the luxury of time on a Sunday morning to make a batch of syrup-drenched fluffy pancakes or a stack of french toast and take it back to bed with a hot cup of tea or coffee.

My Mum makes a cracking dinner in which she coats chicken breasts in beaten egg and then dips them in Paxo sage and onion stuffing mix and bakes them in the oven. They’re absolutely delicious, but as anyone who follows the low FODMAP diet will tell you, onion can be a massive trigger for a lot of people, me included, so I needed to adapt Mum’s recipe to make a FODMAP friendly version.
