Salmon Fillet Salad by The Fat Foodie

I was recently sent a bottle of low FODMAP ranch dressing by the American company LiveFree Foods to test and I decided to make a salmon fillet salad with it. I’ve got to be honest, I’m not the biggest fan of salad dressings because a lot of the time I find them too vinegary, but I was willing to give the lactose-free LiveFree ranch dressing a go because I was curious to taste what it would be like without any onion or garlic in the ingredient list.

I made quite a simple salad consisting of basic salad ingredients because I wanted to give the ranch dressing a real chance to shine through without its flavours being muddled with strongly flavoured ingredients, such as rocket or pickles. I also decided to serve it with cold flaked salmon fillets because I knew the creamy dressing would pair really well with the light smoky salmon.

I’d have this salmon fillet salad with LiveFree ranch dressing again in a heartbeat because after making my salmon fillet salad, I’ve got to say, I’m really impressed with this dressing. It’s really creamy and rich, but also light and well flavoured and it’s not overpowering like many other salad dressings can be. It paired really well with the fresh iceberg lettuce and cucumber slices and was the perfect accompaniment to go with the smoked salmon.

Now, unfortunately at the time of writing this the ranch dressing isn’t available in Britain yet, but Scot from LiveFree assures me that it won’t be long until they’re ready to distribute within the UK. However, I’ve created a really delicious ranch dressing myself that’s packed full of fresh herby flavours and is unbelievably creamy. Depending on how much dressing you enjoy on your salad, I’d say my ranch dressing recipe would make enough for 3-4 salads.

The LiveFree bottle is quite big, so since making the salmon fillet salad my family and I have had the ranch dressing with burritos, potato wedges, chips and even nachos and we’ve genuinely enjoyed it every time. The only problem is, I suspect there’s probably going to be a fight over who gets to finish it…

LiveFree’s Ranch Dressing and The Fat Foodie’s Homemade Ranch Dressing

Ingredients:

1/3 of an iceberg lettuce (thinly shredded)

1/3 of a cucumber (thinly sliced)

1 carrot (shredded or grated)

2 common tomatoes (cut into wedges)

2 cooked cold smoked salmon fillets (or unsmoked, if you’d prefer)

30g parmesan shavings

Freshly ground black pepper

4 tbsps LiveFree Ranch Dressing

Ingredients for the Fat Foodie’s Ranch Dressing:

150g good quality mayonnaise

50ml rice milk

1 tsp dijon mustard

1/2 tsp white wine vinegar

1 tsp lemon juice

1/4 tsp salt

1/2 tsp ground black pepper

2 tbsps fresh parsley

1 tsp dried dill

1 tbsp dried chives (use fresh, if preferred)

1/2 tsp sweet paprika (or smoked paprika, if you want a smoky flavour)

1/4 tsp cayenne pepper (or ground dried chilli) (optional)

Method:

To make the salad dressing put all of the ranch dressing ingredients into a Nutribullet, blender or food processor and blend together until smooth.

Prepare your salad vegetables as directed and place in a large bowl.

Toss the ranch dressing through the salad and then add the salmon flakes and parmesan before grinding black pepper on top.

Serve.
