Shakshuka (serves 2-4)
When I put a call out to my friends a while ago for recipes that they’d like to see featured on my blog one of my friends asked me to make shakshuka. (Sorry it’s taken so long, Chiara!) Shakshuka is a breakfast dish which originates from the Mediterranean and Middle East and is composed of eggs which are baked on a bed of sliced bell peppers that are cooked in a rich and spicy tomato sauce. Halloumi fries are a great idea because how do you improve on the tasty snack that is fries? Make them out of cheese, of course! Banoffee pie is a gorgeous dessert that’s incredibly luxurious, but it’s actually surprisingly easy to make. When I set out to make this Banoffee Pie I wasn’t sure how feasible it would be to make it dairy-free, but it turns out that it’s completely do-able thanks to the existence of coconut-based condensed milk. Of course, if you’re one of the lucky ones who can happily tolerate lactose you can just use standard butter and condensed milk. Continue reading
