Coconut rings are lovely little tasty bites of cake that are formed of creamy desiccated coconut which create a raised moat around a jam-filled centre. They’re a really easy bake to make and require very few ingredients too. In its dried, desiccated form coconut can be used to lend creaminess and body to curries and tagines as well as sweet and exotic fruity flavours to sweet dishes.

This chocolate peppermint slice recipe came about because my Mum had given me a pack of three Fry’s Peppermint Creams that she wasn’t going to use and I figured I’d be able to make something tasty with them.

Giant Jaffa Cake (serves 6-8)

Giant Jaffa Cake by The Fat Foodie

At New Year my eldest stepson decided he wanted to make a giant jaffa cake for dessert on New Year’s Day and I was so impressed with it that I decided to have a bash at making one myself. It feels a bit naughty to put this up on the website because it’s so utterly easy to make, especially when you just buy a ready-made gluten-free sponge to use, but I can completely justify it because it’s delicious and that’s all that matters.
