These Bounty Bites were invented one evening when I really fancied some chocolate, but I didn’t have any in the house and I was already in my pajamas so I couldn’t go to the shop! After a rummage through my kitchen cupboards I realised that I could easily make Bountys with the ingredients I had at hand. The Bounty is one of my favourite chocolate bars (a list which is fairly extensive, to be honest, but don’t let that put you off…). I love their soft, sweet coconut filling that’s packed inside a thick coating of good quality chocolate, be it the milk or dark variety.

Desiccated coconut is a brilliant dried fruit to use in FODMAP friendly recipes because it is low FODMAP in portions under 18g. If you make 18 of these Bounty Bites you can safely eat two of them as a low FODMAP serving. Any more than two Bounty Bites becomes high FODMAP, so I’d advise sticking to two, but they’re really chocolatey and satisfying, so I think two Bites at a time is more than ample as a little sweet treat.

I made my Bounty Bites as roughly shaped balls, but you could form them into more solid rounds if you wanted. You could also cool them in the fridge before dipping them in melted chocolate if you wanted them to be more like real Bountys. I think the Bounty Bites are really tasty as they are though because the desiccated coconut and the coconut cream mixed in with the melted dark chocolate forms the perfect little bite. Heaven!

Ingredients:

200ml tinned coconut milk (chilled)

200g dark chocolate

160g desiccated coconut

Method:

Chill your tin of coconut milk and once it’s cold remove the solid coconut cream from the tin and place it in a bowl. Discard the rest of the coconut milk. (I tend to pop it in the fridge and use it in another recipe the next day.)

Heat the solid coconut cream in your microwave or in a pan until it is warm (not hot though).

Melt the dark chocolate in your microwave (stirring really frequently to it doesn’t burn) or over a pan of hot water.

Pour the dark chocolate and desiccated coconut into the coconut cream and mix until the mixture is fully combined.

Put a sheet of greaseproof paper on your worktop and form small balls of bounty mixture with your hands before placing them on the greaseproof paper.

Once you’ve used all of the mixture up leave them to cool down and firm up before munching!

    A question about the can of coconut milk. Once you’ve removed the solid part, do you use the rest of the can?
